What is a rub?

In catering terms, a rub is a blend of herbs, spices, seasoning and other dry ingredients that you work into meat, fish, vegetables or other food before cooking.

The idea is simple. The rub sits on the surface, adds flavour, helps build colour and creates that lovely savoury crust people notice before they even take the first bite.

Some rubs are fiery. Some are smoky. Some are sweet, warm, earthy or fragrant. The best ones do more than add heat. They bring balance. They lift the food without taking over.

That’s what I’ve always loved about a good rub. Used well, it gives food character.

Years of cooking for clients

Over the years, I’ve cooked for many different clients, events and occasions. Every menu has its own feel, but one thing stays the same – people remember flavour.

They remember the chicken that had just the right kick. They remember the slow-cooked meat with that deep, smoky warmth. They remember the little hint of spice that made them ask what was in it.

That question has come up many times.

“What makes your food taste so good?”

It’s always a lovely thing to hear, because food should create that kind of reaction. It should make people pause for a second. It should make them talk. It should make them want another bite.

Bringing a little Red Pepper home

For a long time, the Red Pepper experience has lived at events – weddings, parties, corporate functions and special gatherings.

But I’ve often thought about how nice it would be for people to bring a little of that flavour into their own kitchens.

Not in a complicated way. Not with a long list of hard-to-find ingredients or a recipe that takes all day. Just something simple that helps people cook with more confidence and get more flavour from everyday food.

That thought stayed with me.

Why I decided to create my own blend

After years of cooking, testing, adjusting and learning what people enjoy, creating my own rub felt like a natural next step.

I wanted a blend that reflected the way I like to cook – full of flavour, well balanced and easy to use. Something that works for a barbecue, a family meal, a weekend treat or a simple tray of roasted vegetables.

The process has taken time, because a good rub needs more than a nice list of ingredients. Every flavour needs to earn its place. Too much heat and it loses balance. Too much sweetness and it becomes heavy. Too much smoke and it overpowers the food.

The aim is to create something with depth, warmth and character – a rub that gives you that Red Pepper flavour without needing a full catering kitchen behind you.

What comes next

Over the coming weeks, I’ll be sharing more about the ingredients, the testing process and some of the wonderful flavours that are helping shape the final blend.

It’s been a lovely project to work on, and I’m looking forward to showing you more as it comes together.
